From the courtyard of the family home on 16 rue Jules Lobet in Aÿ, where the barrels dry, it is just a few steps to the storeroom, where the wine begins its lengthy task of becoming a champagne. Two streets above, at Chaudes Terres, is the winery with gleaming heat-regulated stainless-steel tanks. A staircase separates them from the cellars, where the cuvées ages peacefully.
